With heavy hearts, the Smithsonian food history team pauses to reflect on the legacy of Anthony Bourdain. As home to the kitchen of America’s beloved cooking teacher, Julia Child, we recall Bourdain’s response when asked by a young man about where to begin learning about food and cooking. Bourdain boomed, "Julia Child, Julia Child, Julia Child." On Friday, we were grateful to be able to fire up our demonstration kitchen for a program with Chef Edward Lee. @chefedwardlee prepared “dirty” fried chicken and Hoedduck (Korean donuts) while speaking about the power of place in creating regional foodways and regional identities. We recognize and appreciate Bourdain’s feverish embrace of culinary traditions and people the world over.
