By around 5000 BC the trees were domesticated, and the oil quickly transformed the way people lived – it was burned as fuel in lamps and helped preserve food longer. The process of making modern olive oil hasn’t changed too much since then, and would be familiar to people in the past – this fact helped curator Jamie Fraser and scientist Caroline Cartwright track down an ancient olive oil factory in Jordan.
