🍌Banana Oat (Breakfast) Muffins
30-minute recipe
Here’s a glimpse of how I casually develop a new recipe!
I came home from a short trip to NYC to find a bunch of very ripe bananas sitting on the counter. I was tidying up when some of them fell off the stem… which meant that it was a sign to bake something with them.
Here is a quick 30-minute recipe when your bananas are too ripe to eat. It’s also a good idea to have all of these ingredients on hand. They are really useful in times like these!
INGREDIENTS
Large Bowl of Dry Ingredients:
1 1/2 cups AP flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 1/2 quick oats
Medium Bowl of Wet Ingredients:
1/2 cup browned butter
3 ripe bananas
2 eggs
2 tsp vanilla extract
15 drops Madagascar Vanilla essential oil (dōTERRA brand only)
1 drop Baking Spice (dōTERRA brand only)
3/4 cup maple syrup
INSTRUCTIONS
1. Preheat oven to 425°F & line a 12-cup baking tin
2. Whisk dry ingredients in a large bowl
3. Mix wet ingredients in a medium bowl
4. Add the wet ingredients to the dry ingredients until just combined
5. Scoop into the lined tin
6. Bake for 5 minutes at 425°F
7. Turn down the temperature to 350°F and bake for 15 minutes
8. Enjoy with a side of love 🤍
