The "New Local Ramen Creation Project" is a proposal for a new type of ramen that takes advantage of the food culture and specialties of such regions. This project is open to people who live or work in the area, and the condition is that they must operate a store at Ramen Museum for one year and return to the area to open a store. The first round will be held in Okinawa. Mr. Shigemi Kawahara, founder of Ippudo, was invited as the producer, and Mr. Ryoji Kinjyo of the Ryoji Group, an izakaya (Japanese style pub) operator in Okinawa, was selected after screening of applications, interviews, and practical skills tests. Now, 20 years after its birth, it has evolved in its hometown of Okinawa, and in 2015, it was revived in Ramen Museum as "Izakaya Ryoji" and also serves ramen as Tondo during the daytime.
