Photo by @ジミー・チン | This is Pascual. He's a gaucho, his fortitude and temperament forged from the windswept landscape of the Patagonian Andes. Watching him ride his horse on steep terrain while trailing loaded pack horses made me feel like I’d never taken any real risks in my life. We learned a lot from Pascual on our trip into the mountains. Among other things, we watched, eyes wide and mouths agape, as he made gaucho coffee over the campfire: Boil pot of coffee in fire. Pick up top handle of brimming pot from fire. Casually windmill pot for two minutes until coffee grounds are pressed to the bottom of pot. Serve hot. We’ve been calling it the gaucho press. All of this is to say, we were very impressed with Pascual. #oldschool @tompkins_conservation
