It’s easy to make fresh egg pasta at home. For 1 portion I do 100g of semolina (durum wheat flour) with one egg, a pinch of salt and a spoon of olive oil. I mix it into a dough, let it rest in the fridge for one hour (cover it with film) then I roll it in the machine, folding it and re-rolling it a few times, then I cut it and throw it straight into the boiling water. I enjoy it with a meat rich ragù ;)
