🥒 You don’t need cucumber to make the BEST tzatziki…
This recipe uses a spare zucchini (or courgette, depending on where you’re reading this!) and has the same punchy, creamy flavours as traditional tzatziki.
With a hint of garlic, a zing of lemon, and the full fat thickness of a good quality yoghurt, for me, it’s the ideal side at a BBQ 🙌🏻
The trick here is to strain the yoghurt (more tips on this coming soon) and to serve with a really good sourdough 🍞
