The duo spent $40 million to tear it down, to rebuild it and, they joke, to keep everything the same, except now sanitary. There is the refurbished cavern room, one of many themed dining areas. Cliff divers now practice their routines in a safer, much-improved pool area. They replicated the building’s proper shade of flamingo pink. Casa Bonita has the same 1970s vibe popular with kids, but with drastically improved food. The duo hired Dana Rodriguez, a James Beard-nominated chef, to run the kitchen, which churns out 200-gallon batches of mole daily. Indeed, Casa Bonita, located in suburban Denver, returns as one of the biggest Mexican restaurants in the world. During the demolition phase, one cause of Casa Bonita’s subpar cuisine became clear. “There were no ovens, no range tops,” Stone said, adding “They steamed everything.” Local fans of Casa Bonita speak of the reopening as if the beloved “Orange Crush” Denver Broncos of 1977 had been revived from a cryogenic state. More than 100,000 potential customers have signed up on the restaurant’s website to make a reservation, Stone said.
