The tuna should have a bright/rich red hue and it should smell fresh.   Salsa macha: -½ cup Ancho pepper (deseeded and rehydrated) -¼ cup guajillo chile (deseeded and rehydrated) -1 tbsp arbol chile (deseeded and rehydrated) -4 tbsp morita chile (deseeded and rehydrated) -1/3 cup minced garlic -2 tbsp toasted sesame seeds -1 qt extra virgin olive oil -3 tbsp white wine vinegar -Fresh-picked and chopped oregano   -1 tbsp salt -2/3 cup toasted pumpkin seeds   Peach vinaigrette (prepare at least 2 hours in advance): -2 lb peaches, peeled and pitted -1 tsp garlic, sliced -½ cup green onion, sliced -1 tbsp ginger, peeled and sliced -6 leaves basil -1 tbsp serrano chile -1 tbsp salt -3 tbsp lime juice -¾ cup canola oil -1 lemon   Recipe Prepare peach vinaigrette  In a non-reactive container, combine all peach vinaigrette ingredients except the canola oil and marinate for at least 2 hours. Marinate all of the vinaigrette ingredients together except for the oil. Break up into batches of about 1 cup each, then slowly drizzle in the oil. Once blended, pour through a fine mesh sieve. If necessary, add water to adjust consistency. Add salt for taste. Create salsa macha Combine chilies in a food processor and pulse until they are broken up. Add garlic, sesame seeds, white wine vinegar, oregano, and salt. Pulse again until well combined. Remove from the processor and place in a bowl. Stir in olive oil and pumpkin seeds. Taste for salt and set aside in the fridge until ready to use. Prepare tuna and serve In each bowl, add 2 ounces of sliced tuna and 3 ounces of peach vinaigrette. Ingredients
-1 lb fresh tuna loin. The tuna should have a bright/rich red hue and it should smell fresh.

Recipe
Prepare peach vinaigrette 
In a non-reactive container, combine all peach vinaigrette ingredients except the canola oil and marinate for at least 2 hours.

Create salsa macha

Taste for salt and set aside in the fridge until ready to use.
Prepare tuna and serve
In each bowl, add 2 ounces of sliced tuna and 3 ounces of peach vinaigrette.
Garnish with salsa macha, and a lemon wedge, then serve.
