Every 10 days or so I make a gigantic pot of soup:
1-boil black beans, pinto beans, chickpeas(save liquid).
2-in another pot: sautée onions, scallions, leeks, shallots, garlic.
3-add carrots and potatoes and homemade vegetable stock to sautéed onions, etc.
4-boil til potatoes are soft.
5-puree potato/onion/carrots, etc.
6-add purée to cooked beans and bean liquid.
7-add bay leaves and salt and pepper and corn.
8-cook at low heat for another hour, stirring regularly.
And if you make enough you can freeze half and it should feed you for 10 days.
Also nutritionally it’s perfect: filled with protein, antioxidants, fiber.
