While we are excited for a brand new year, the unexpected challenges of 2020 have prepared us for what lies ahead in 2021. Already the government in Japan has required all restaurants to close by 8pm, from now until 7 February.  It’s a difficult time to be in the hospitality and food industry. But we must not lose courage. I sincerely pray for more positivity and adaptability for the entire world as we are all facing this global situation together. Perseverance kept us alive before and it will keep us going now.   It is interesting the word "restaurant" comes from the French verb “restaurer”, referring to the restorative broths from centuries ago. Now we see restaurants have never been just a place for eating.  With all the self-isolating, it is clear they are a place for mental and communal restoration.  Like many of our peers in the industry, our operations have changed drastically and I am grateful for our incredible team who meets every obstacle with optimism and acceptance. The lockdown period is giving me a chance to upgrade everything, from tools to ingredients and to discover more amazing artisans and producers too.  In the latest phase of the WAGYUMAFIA story, we are entering a new chapter with WAGYUMAFIA DISTRICT, and our brand new sparkling sake, “S”. I look forward to sharing more details with you soon. It’s a difficult time to be in the hospitality and food industry. But we must not lose courage. I sincerely pray for more positivity and adaptability for the entire world as we are all facing this global situation together. Perseverance kept us alive before and it will keep us going now.
