You wanna know what ambassador @kayla.dierdorff loves just as much as peak bagging? Dinner post summit back at basecamp. Kayla's magic tool for open flame cooking is her trusty cast iron.
Among her extensive camp recipes, quesadilla's and sautéed veggies are her go-to.
Quesadilla:
Pre cooked chicken
Olive oil
Sea salt (a stable of every camp kitchen)
Cheese
Tortilla
Sauté the onions first in olive oil. Once done, place inside the prepared quesadilla with the chicken, cheese and sea salt. Add a little more olive oil to the pan, throw the pan on the fire and cook the quesadilla until golden brown on the outside and the cheese melts!
Sautéed Veggies:
Broccolini
Zucchini
Asparagus
Sea salt
Add the veggies to the already hot and oiled pan on the fire! Cook for 5 minutes. Bada-bing-bada boom! Easiest best dinner with all the necessary nutrients after a long day in the mountains.
