I always love the idea of an olive oil cake - simple, slightly austere but still elegantly rich - it seems a perfect accompanying partner for a dark rich cup of earl grey - but try as I might I never seem to find the right texture or balance with these cakes .
Do you have any favorite olive oil cake recipes? I’m thinking I will try another this weekend .
