“BUTTER NO ITOKO” is a baked sweet snack similar to traditional French snack, Gaufre. This is made of fat-free known as“skim milk” produced during the process of making butter.

BUTTER NO ITOKO project began to raise awareness of the value of skim milk which tend to be traded at low price in the market.
.
This is a “win-win-win” project for milk producers, purchasers and local people by heightening value of skim milk.
.
BUTTER NO ITOKO is characterized by three textures of “soft, crispy and creamy” and rich flavour of milk.
.
This is not only delicious, but also made from the idea that it can solve the problems in the local society.

This is produced and sold by @chus_table which runs a guest house with a market and a restaurant next to it, and “Shinrin-no-Bokujo” a ranch of Jersey cattle in Nasu Machi.
.
This time, I hope we can tell about challenges that we have in Japan’s local societies and how this project started with @goichi_miyamoto , a representative of Chus through the selling at POP-UP.

Chus is a complex of a market, a restaurant and a guest house located in Nasu, Tochigi Prefecture in Japan.
This appeals lots of tourists and local people as the Market has abundant vegetables and processed food directly delivered from local producers and people enjoy dishes with local fresh ingredients in the restaurant.

　ALCBでは10/31(水)と11/1(木)の2日間、とろっとしたミルクジャムがたっぷりと入った栃木・那須で生まれた焼き菓子、『バターのいとこ』のPOP-UPを開催いたします!!

「バターのいとこ」とは、バターをつくる過程で出る、無脂肪乳 = “スキムミルク”を使って作られた焼き菓子です。
市場では安価で取引されてしまうスキムミルクの価値を高めることで、酪農家を応援することができる、そんな、生産者も、購入者も、地域の人も、「三方良し」のプロジェクト。
