In the lush jungles of Mexico's Yucatán Peninsula, Danish chef René Redzepi (@reneredzepinoma) is adapting his ethos of hyper-local cuisine to Tulum's vibrant food culture. “I keep coming back to Mexico to learn and be inspired by the rich food history and tradition,” says René, whose seven-week pop up runs through the end of May. This is the third temporary restaurant that René has created in as many years, taking Noma – his Copenhagen restaurant that's consistently ranked one of the best restaurants in the world since it opened in 2003 – on the road with its full 145-person team.
After hosting the Noma pop up in Tokyo and Sydney, René was drawn to Mexico's culinary heritage. “Mexican cuisine is so vast and varied,” says René. “Food traditions have been preserved and passed on across thousands of years, and with the tremendous biodiversity, it is an incredibly genuine, complex and delicious cuisine.” You won't find Noma's dishes translated with Mexican ingredients, though. No matter where in the world he is, René's cooking is “less of a style, and more of a way of thinking,” he says. “It's a consideration of the land, the history, the people and the ingredients themselves.”
