RECIPE Makes 6 Baked using Turbo Incanto Oven TFM8627 oven. A) 80g bread flour 1.5 tbsp sugar 1 tsp instant dry yeast 3 tsp pumpkin powder 1 tbsp egg 85ml warm water B) 80g bread flour 20g unsalted butter 0.5 tsp salt C) Edible food pens Deep fried thin pasta sticks METHOD In a bowl add in (A) dry ingredients & egg. Then add in warm water and mix vigorously to activate the yeast Add in (B) ingredients and mix. Scrap all onto worktop Knead until window plane stage or when the dough is stretchy, smooth and even Shape into ball and place in a bowl. Cover with cling wrap and rest at warm place for 35mins (you may need to adjust depending on temp) for first fermentation, until it increases about 1.5 times Preheat oven to 180C while you wait for the fermentation step Degas the dough and divide into one part 24g and the rest each 47g (or equally into 6) Cover and rest for 10mins Then punch out the gas and shape into round bun. Place on baking paper. Repeat for all the larger dough balls. Flatten the 24g dough. Divide into 12 pcs and shape into long teardrop. Place on baking paper. Cover gently baking tray with cling wrap and rest for 10-15mins for 2nd fermentation. Bake at 180C for 7mins, remove the ears. Then continue baking at 160C-170C for about 9 mins. During this time cover with aluminum sheet (shiny side facing up) to prevent over browning Let the bread buns cool Draw the eye and mouth, and tip of ears using edible food pens Insert the ears using some deep fried pasta sticks as attachments.

A)
